French cheesy onion quiche

Preparation time: 15 min - Baking time: 30 min  

Portions: Serves 2 people (as main course or about 4 people for lunch with a side salad)


1 cake puff pastry (ready made dough to roll out)

4 eggs

2.5 dl light cream

200 grams of Emmental cheese (170 grams of cheese for the filling, 30 grams for the topping)

1 large red onion

100 grams of bacon cubes

1 teaspoon of dried rosemary

1/2 teaspoon of dried thyme

1 tablespoon of olive oil

peper and salt

What you'll need:  

a bowl to mix the ingredients together

a pie dish baking tray



  1. Preheat the oven to 200°C, on hot air circulation (or follow the instructions on the packaging of the dough brand you've chosen) 
  2. Lay out the dough to let it come to room temperature (it will unroll much smoother when you give it a few minutes)
  3. Take out a bowl and mix the following ingredients together by stirring them until it has a smooth texture: 4 eggs, the cubes of bacon, the light cream and 170 gram of cheese and lastly a bit of peper and salt to your liking
  4. Unroll the dough and lay it flat into the pie baking tray. Press the dough gently to fit into the cake mold. Use a fork to make a couple of small holes
  5. Pour in the mixture and spread it out evenly over the dough
  6. Slice up the union into rings to decorate the cake with, it makes a beautiful and delicious topping
  7. Sprinkle the quiche with the left over grated cheese, the herbs and the olive oil
  8. Bake the quiche in the middle of the oven for about 30 minutes. If you see the filling is rising in the tray, be sure to make some extra holes

Tip: Serve a slice of quiche with tasty French vinaigrette drizzled green salad or with crispy fresh coleslaw salad
